Patience,
a value as rare as it is essential nowadays: the time
necessary to ferment, to develop and to reach maturity.
Time is precisely what governs the making of this biscuit
with its delicately mixed flavours.
"Patiences" are the fruit of the marriage
between a forgotten Alsatian recipe and the taste for
poetry from an artist pastry cook, Philippe Joussaud.
"Patiences" are small delicacies,
confetti shaped with flavours hitherto little used in
biscuit making: Aromatic plants (Green anise, mint,
bergamot), Flowers (Violet, Rose), Citrus fruits (Orange,
lemon), Fruits (Cherry, raspberry, blue berry, strawberry,
apple), Traditional (Vanilla, coffee).
"Patiences": The magical meeting between eggs,
fresh butter, fruits, plants and flowers.
And to come soon: daffodil, mimosa, poppy, fig, passion
fruit, mango
Our "Patiences" are only manufactured to order,
without the addition of preservatives and should be
eaten within five months of their manufacture.
"Patiences" are offered for sale in 3 presentations:
Solo (one flavour), Duet (two flavours) and Cocktail
(set of several flavours).
